Ordering steak for delivery is always a gamble. You’re trusting that your perfectly cooked meal will somehow survive the journey from kitchen to table without turning into shoe leather.
But when your food arrives after an hour-long wait and looks nothing like what you ordered, it’s hard not to feel ripped off.
Longhorn Steakhouse Order Gone Bad
In a viral video with more than 205,000 views, content creator Gwenetta Ewing (@ewinggwen) showed off her disappointing Longhorn Steakhouse to-go order from a St. Louis, Missouri, location.
“I am so f——- mad just look at this,” the text overlay on the video read.
“This is absolutely ridiculous,” Ewing says in the video. “We ordered two porterhouse steaks medium well.”
The steaks in the video look severely overcooked—charred on the outside and far past medium well. But the steak wasn’t her only problem.
“The house salad—I asked for French and ranch. They gave me something spicy,” Ewing explains. She’d already mixed the mystery dressing into her salad before realizing it wasn’t what she ordered.
“This is extremely spicy. I done put it all over my salad. I can’t eat the salad definitely,” she says.
In her caption, Ewing wrote, “MAD AS HELL! PLACED A TO GO ORDER AT LONGHORN STEAK HOUSE, AFTER WAITING FOR OVER AN HOUR. GETS HOME OPEN MY FOOD AND THIS IS WHAT I GET.”
Why Medium-Well Steak Is Controversial
Here’s the thing about ordering steak medium well: You’re already working against the meat. According to Omaha Steaks, medium well means a mostly brown center with a firm texture. At 150 degrees Fahrenheit, water has started evaporating from the meat, making it noticeably drier than medium rare or medium.
And Omaha Steaks doesn’t mince words about well-done steaks: “The meat loses fat and moisture as it cooks, resulting in a dry, tougher texture. We don’t recommend cooking to this doneness.”
Understanding Steak Doneness Temperatures
For anyone curious about steak temperatures, here’s how Omaha Steaks breaks down the different levels of doneness:
- Rare (120 degrees Fahrenheit): Cool to warm red center with soft, tender texture. Best for leaner cuts like filet mignon.
- Medium Rare (130 degrees Fahrenheit): Warm red center with a nice brown crust. The fat in the steak renders and adds buttery, rich flavors. This is the recommended doneness for most steaks.
- Medium (140 degrees Fahrenheit): Hot pink center with slightly firmer texture. Noticeably drier than medium rare.
- Medium Well (150 degrees Fahrenheit): Mostly brown center with firm texture. The meat is significantly drier as water evaporates during cooking.
- Well Done (160 degrees Fahrenheit+): No color left, very firm, and much drier. “We don’t recommend cooking to this doneness,” Omaha Steaks states flatly.
Tips for Cooking the Perfect Steak at Home
If you want to avoid disappointing delivery steaks and cook your own at home, Heartstone Farm recommends these key tips:
- Let your steak come to room temperature before cooking (about an hour) to ensure even cooking.
- Pat steaks dry with paper towels before cooking so they get crispy on the outside.
- Don’t over-season—salt is crucial, but limit yourself to salt, pepper, and maybe garlic so the steak flavor shines.
- Use high smoke-point oils like avocado, canola, or soybean oil (olive oil smokes at just 300 degrees Fahrenheit).
- Use a cast iron skillet that’s very hot to get the right sear.
- Don’t worry about flipping too often—it actually helps the steak cook more evenly.
- Use a meat thermometer and remove the steak when it’s 5 degrees Fahrenheit below your target temperature.
- Let the steak rest for 5 to 10 minutes before cutting into it so you don’t lose all the juices.
- Cut against the grain to make the meat more tender.
- Serve on a warm plate to maintain the steak’s temperature.
