A man went to Pappasitos, only to notice a plate of fajitas wasn't sizzling. Here's why his viewers told him he was better off for it.
A Texas man went to a Pappasito’s Cantina with one big expectation: fajitas that sizzle. Then his table received a particularly cold-looking entree that, in his eyes, underperformed.
In a video that received more than 13,000 views, a TikToker who goes by the username @ahoustonian slammed Pappasito’s for bringing out fajitas without a sizzle. Commenters weighed in and offered the content creator some insight—the sizzle isn’t necessarily a sign that the fajitas are cooked better. Rather, it’s a deliberate visual effect.
‘You Will Live Without The Sizzle’
The content creator questioned why his table didn’t receive a popping and crackling fajita plate. He even went as far as to say that he wouldn’t be returning to the Pappasito’s location, presumably because of the fajitas.
Viewers, however, told him not to worry about it.
“You know the ‘sizzle’ is just water they pour in the hot cast iron for a visual effect. Your food doesn’t actually come out sizzling,” one viewer said.
Another commenter said, “As a former employee, it’s just a sizzle oil that goes on the hot skillet … Trust you will live without the sizzle.”
How Do Restaurants Create The ‘Sizzle’ Effect?
Online, multiple publications, blogs, and discussion threads say restaurants use water, lime juice, and oil to create a sizzle. Water, as it turns out, is a key component.
Mashed explains, “When water makes contact with a surface at a high enough temperature, bubbles form and explode like tiny bombs. The crackling sizzle you hear when an order of steamy fajitas arrives at your table is just the sound of the bubbles detonating on your plate.”
Does The Oil Add Any Flavor?
The news that some restaurants use a “sizzle oil” to finish plating fajitas can be surprising, but there are multiple chains that engage in the practice. Chili’s is one example of a chain that uses a sizzle oil.
But does the sizzle oil actually have no effect on the food quality? It appears to depend on what’s in it. If it’s just oil and water, it may make little to no impact when it comes to the flavor of the food. But a representative from Chili’s, for instance, said their sizzle oil was more than just a flourish.
“As the final step before serving, we use a savory, smoky sauce that enhances the flavor and aroma of our fajitas,” a Chili’s representative told TODAY. “The sizzle isn’t just for show — it’s for creating delicious, craveable fajitas.”
