One of the best ways to get to know someone is through the immortal question: How do they like their steak? For one Texas Roadhouse customer, the answer is blue rare—but not all viewers are convinced.
Blue steak is probably one of the most divisive meals out there. While it’s served at most steak restaurants, some seem unable to get the dish right. Still, this hasn’t deterred TikTokers like Monique Elyousfi (@themoniqueelyousfi) ordering it from Texas Roadhouse.
The Texas Roadhouse Display
In the video, which was filmed at the restaurant, Elyousfi held up a plate of 20 ounces of ribeye steak she says she ordered from inside the display. It cost a considerable $38.
She then invites audiences to see if the grill master got it right. As she cut into her steak, she calls it the “moment of truth.”
After cutting, she reveals inside of steak, which is moist, pink, and fleshy, to viewers.
“Is it blue rare, or is it just medium rare?” she asks.
A child’s voice then asks whether it’s meant to be blue. Elyousfi agrees that it is supposed to be, but points out that it will still be “really raw in the middle.”
“Perfectly blue rare,” she adds.
Elyousfi then adds some sea salt and dives in, remarking the smell of the steak from the char from the grill.
She then takes a bite and groans enthusiastically, saying, “Oh my gosh.”
“That grilled flavor, you guys, look at this bite—” she says. She holds a piece of steak on a fork in front of the camera.
“That is the most perfect blue rare steak I think I have ever had,” she says.

Commenters were unsure about the steak.
“I think it’s raw and you’re at risk,” one wrote.
“Why would you want cold meat?” a second asked.
“It’s raw that’s what it is,” as third remarked.
“Medium rare is the only way to order steak,” a fourth opined. “Blue rare is goofy as f— lol.”
And a fifth joked, “Not blue but still oinking.”
What Is ‘Blue Rare’ Steak? Is It Dangerous To Eat?
It seems that commenters’ concerns are unfounded. As reported by Smoked BBQ Source, blue steak refers to when a steak is cooked enough for the outside to be browned while the inside remains completely raw.
According to the website, blue steak is only placed onto the grill for approximately one minute. The internal temperature is usually around 115 degrees Fahrenheit.
When meat is first cut, it has a blue/purplish hue to it. This is why barely-cooked steak is called blue steak. But blue steak doesn’t usually end up staying that color. As soon as it is exposed to oxygen, it will start to become oxygenated and turn the red/pink hue we usually see on raw meat.
The site also bears good news: Blue steak is not unsafe to eat, but there’s an important caveat. The entire surface of the steak must be sealed brown before serving. This is done in order to kill any surface bacteria that might be lingering on the meat.
