With Prices Up To $35K Per Kilo, Here’s What Makes Caviar So Expensive

Caviar is one of the most expensive foods on the planet. It comes in a wide variety of types, textures, colors, and flavors (there are 27 types). The most expensive caviar on the planet can sell for up to $35,000 per kilo. Caviar is fish eggs but not all fish eggs are caviar. To be true caviar the fish eggs must come from one of the 27 species of sturgeon in the world.

What makes these mini salty fish eggs so expensive? The answer to that question isn’t as simple and straightforward as explaining why foods like truffles and wagyu beer are so expensive. The team over at Tech Insider‘s YouTube channel put together this clip explaining what makes caviar so expensive.

If you’ve never eaten caviar before then you might have it in your head that this ridiculously expensive food is automatically delicious because a kilo can cost more than your car. But I’ve tried many varieties of caviar and there are plenty out there which I dislike. The flavors range so much it’s almost unfair to call the 27 types ‘caviar’ because you could love one and hate another.

If you’re interested in trying caviar for the first time I’d recommend doing research on the Internet first to find where you can purchase it from sustainable sources. You’re also likely to find much better deals online than you will at the grocery store.
