Chef Claims His Pork Chop Is Better Than A Ribeye. Then This Florida Man Puts His Recipe To The Test: ‘This Dude Changed My Chicken Game’


Can a pork chop really beat out a ribeye steak? One chef thinks that, with his recipe, he can—so one man from Florida put that to the test.

Meat is one of the most versatile of foods out there. Connoisseurs will know that there are plenty of different types, including ribeye, sirloins, and New York strips. You can even DIY it and turn leftover chunks and brisket into a ribeye. While it’s pretty uncommon to compare a ribeye steak to a pork chop, chef Malcom Reed (@howtobbqright) did just that.

He even went one step further, telling viewers, “I can make a pork chop that will rival the best ribeye you’ve ever ate. I promise you.”

In turn, TikToker Parker (@parker_fish_cooking) decided to call his bluff. Sharing Reed’s video in the top right-hand corner of the screen, the creator says in response to Reed’s vow, “Let’s put it to the test.”

He then dutifully follows each one of the chef’s instructions.

How To Cook The Perfect Pork Chop

Parker starts off by coating the pork chop in Worcestershire sauce, and then enhancing the flavor with a mixture of salt, pepper, and garlic for the base. Notably, Reed says to not cut the fat and to leave it around the edge.

With the prep done, Reed says that the next step was to fire up a Weber grill and to put the pork chops on the “cool zone” at the edge of the grill. Parker follows suit.

While doing this, Reed recommends keeping an eye on the internal temperature. In turn, when it reaches 125 degrees F, Parker does what Reed said and moved the chops over one at a time. He then starts flipping them in minute-and-a-half intervals like Reed suggested.

Parker continues this until the meat is done to his satisfaction. As Reed points out, the meat should have an internal temperature between 135 and 140 degrees F.

Reed then describes how, when he cut up the meat, there was juice oozing out of it.

Parker slices his pork chop and showcases a similar ooze to demonstrate the similarity.

The TikToker then tries the pork meat and nods in approval. As a source of comparison, Parker then tries a ribeye steak that was cooked medium-rare.

“Mr. Malcom’s alway’s right,” he concludes. “This pork chop definitely holds up.”

The clip amassed 745,300 views.

In an email to BroBible, Parker said, “I’m always watching videos to try to learn and improve in my cooking skills. I watch Mr. Malcom Reed a lot because he is the GOAT of BBQ, and I’ve learned a ton from him so I enjoy making his recipes and sharing those with others.”

He went on to add that the reception in the comment section had been “great.” The creator noted that “there are a lot of people who haven’t tried a really good pork chop cooked the right way, so it was awesome to see some of the comments saying they were going to try pork chops with this technique.”

He continued, “Cooking is my passion! I love sharing it with people. I love seeing the smiles that people get on their faces when they take a bite of something really delicious. All of my future hopes and goals revolve around cooking and sharing my passion, so it’s awesome to see videos like this resonating with people.”

Meanwhile, also in an email to BroBible, Reed said, “One of the best things about cooking is sharing ideas. You cook a recipe and share it, someone else takes it – maybe even puts their own spin on it – and shares it with someone else. I’m always getting inspiration and ideas from other BBQ guys out there. And Parker’s pork chops looked even better than mine!”

What Did Commenters Think?

Commenters had faith in the process. “Anyone else other than Malcom I’d immediately call BS but anything Malcom says about BBQ I’m all in a believer,” one wrote.

“He’s literally a grilling genius,” a second added, referring to Reed.

While a third chimed in, saying, “People who can cook will tell you bone in pork chops can be on par with ribeyes. So are pork steaks. Now I do prefer the ribeye.. but I’m not gonna be mad if I have the chop or pork steak instead. They’re all so damn good if you know how to cook them.”

A fourth shared, “I have changed so many people’s opinions on pork chops by cooking them like this. Reverse seared to 142 is the way. AND LET THEM REST.”

And a fifth said, “I made pork chops the other day that were better than any steak I’ve ever had.”
