How to make Bacon & Beer Cheese Dip

Super Bowl parties are usually potluck, so don’t be the guy who ends up having to take something back home. This Bacon & Beer Cheese Dip will make you seem awesome even though you’re wearing a Lions jersey on Sunday.

Obviously you don’t need to eat beer while you drink beer, but why wouldn’t you? Throw in some bacon and you have the best dip known to man. Just don’t be an idiot like me be stuck with leftover Ritz crackers because you used all your good chips to make deep fried chili (foreshadowing).

Buying a dip from the store is obviously easier than making your own, but then there wouldn’t be any beer or bacon. At that point you might as well bring a quinoa salad or tofu platter to the party. Man up and make one from scratch. It’s really not that difficult. I’ve already shown you the Raspberry Black Bean Dip and the Spinach and Artichoke Crack Dip with Bacon.

I was originally going to use a beer from either Denver or Washington for this Bacon & Beer Cheese Dip, but then I realized that was incredibly lame pandering. Instead, I remained bi-partisan and went with Arrogant Bastard. The recipe is probably better served with an IPA than a strong ale, but I’m a big strong man and needed a big strong dip.

I put my shitbag little food processor to use to mix everything together, and you should do the same (feel free to borrow mine). It’s almost impossible to completely break up cream cheese by hand, and you don’t want little chunks in there. They won’t kill you; it just looks like amateur hour.

If you’re going to a friend’s place to party, hold off on putting it in the oven until you’re there. It’s fine in the refrigerator until gametime, so don’t bother cooking it only to have to reheat it anyway.

Touchdown! The kick is good! Broncos elect to receive! There you have it. An awesome Bacon & Beer Cheese Dip in just four pictures. It could have easily been done in two, but I know how much you like watching the action unfold.

This recipe comes from the best beer chef in all the land, The Beeroness. I swapped beers but stuck to her master plan the rest of the way. Why mess with greatness?

Ingredients:

  • 16 wt oz cream cheese
  • 1/2 cup sour cream
  • 1 2/3 cups shredded mozzarella
  • 2/3 cup shredded cheddar
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 2 tbs cornstarch
  • 6 oz IPA or Pale Ale Beer
  • 8 slices bacon, cooked and chopped

Directions:

  1. Preheat oven to 350.
  2. Add everything but the bacon to a food processor.
  3. Process on high until smooth and well combined, about 5 minutes.
  4. Stir in most of the copped bacon, reserving about 2 tablespoons.
  5. Pour the dip into an oven safe bowl top with reserved bacon.
  6. Bake at 350 until warmed through, about 15-20 minutes.
  7. Eat 25% of the dip with a spoon.
  8. Smooth remaining dip out so it looks like you didn’t eat any.
  9. Serve warm.
  10. Collect praise.
